The Climate Cabbage (Klima Kohl) project is located at 2.700 m height at the Dachstein mountain inside of Dachstein Glacier, called EISPALAST. The project explores the question of how plant growth can be possible in hostile living conditions. The constant temperature of -6°C to -2°C in the glacier serves as a testing ground for the cultivation of edible plants. Lamb’s lettuce, foxtail, chard, winter purslane as well as herbs, lettuce and vegetable varieties cope very well with this extreme climate, as they can put their leaves into a kind of biological frost protection mode, which even has a flavour- improving effect.
The plant experiment refers to extreme weather events that we are experiencing in climate change, demonstrates the ecological potential of frost-resistant vegetable varieties and points out that this potential has not been utilized in the practice of local food supply. The otherworldly environment of the glacier provides the ideal contrast to reflect on the carbon footprint of our food.
